VINEYARD: Pajuhi and Starici positions, planted in 2009 and 2015, altitude of 90-120 metres above the sea level. The soil is a typical Tstrian red soil, sandy and warm. Positions are also characterized by a permanent air flow which favourably affects the maintenance of freshness and aroma of white varieties of earlier ripening, such as Chardonnay.
VARIETY: Chardonnay
VINIFICATION: Pressed under the protective inert atmosphere of nitrogen - of whole grapes, or only individual grapes without crushing, controlled fermentation in stainless steel tanks at a temperature of 14-16 °C, ripening on fine yeast precipitate (sur lie) for 6 months without malolactic boiling. Bottled after 6 months of ripening, aged in a bottle for a month after bottling.
RIPENING POTENTIAL: Enjoy immediately or store for up to 2 years
WINE DESCRIPTION: Crystal clear, greenish yellow colour, fine white fruit, apple, pear, and tropical fruit aromas, fresh and harmonious on the palate, of pleasant taste durability.
RECOMMENDATION: Enjoy chilled at 10-12°C as an aperitif, with light pasta or risotto appetizers, with white meat, fish, or seafood dishes.
