DRY WHITE WINE, PREMIUM WINE OF CONTROLLED GEOGRAPHICAL INDICATION, PDO CROATIAN ISTRIA, WESTERN ISTRIA VINEYARDS

VINEYARD: Locations in Devici, Starici and Vizinada, vineyards erected in 2006-2018, at altitudes of 140-260 m, on hilly inclined terrains of various exposures. In Vizinada, the soil is typical Istrian "white soil" on flysch, deep, drained, and fresh, extremely mineral with naturally limited fertility, in the positions of Devici and Starici medium deep, fertile, warm, and skeletal Istrian red soil (terra rossa). Breeding form single and double Guyot, the yield is 1.5-1.8kg/vine.

VARIETIES: Istrian Malvasia. In certain years, a small proportion of Viognier enters the blend. It is made from selected grapes with the best natural microlocations of vineyards, which allow balanced ripening and development of the best and most intensive typical varietal characteristics, in the amount of approximately 45,000-60,000 bottles per year.

HARVEST: from the beginning to mid-September

VINIFICATION: Harvest of selected grapes from the best locations, in early morning while temperatures are lower, additional cooling of grapes to 5-10 °C before them being processed using dry ice (CO2), separation of petioles with minimal damage to berries; depending on the ripening of a few berries, cold maceration for 12-16 hours under the inert atmosphere of dry ice (CO2), pressing of berries with inertization of the system with nitrogen (N2), fermentation in stainless steel containers at a temperature of 14-18 °C, ripening on a fine yeast precipitate for 6 months with regular mixing of precipitate, without malolactic boiling, except in exceptional years.

RIPENING: In stainless steel containers, bottled after 6 months of ripening on yeast precipitate into 0.75L bottles with a cork stopper; after bottling, aged in a bottle for a minimum of 2 months. The wine goes on sale within a year after being harvested but continues to develop for the next 2-3 years in the bottle, when in most years its peak quality is reached.

RIPENING POTENTIAL: Enjoy immediately or store in appropriate conditions, the expected development and maintenance of quality is 1-3 years from the harvest.

WINE DESCRIPTION: Crystal clear, of greenish yellow colour, characteristic floral-fruit aromas, citrus, tropical and bony fruits, characteristic floral aromas on acacia, the taste is pure, dry, with medium pronounced acids, medium body and pleasantly fresh, recognizably salty and mineral, more permanent fruity flavour on citrus and tropical fruits, of a characteristic, slightly bitter, medium-long finish.
