QUALITY WINE OF CONTROLLED GEOGRAPHICAL INDICATION PDO CROATIAN ISTRIA
VINEYARD: Kaligarici, Lokvadic, Basarinka and Krsete positions, planted 2004-2009, altitude of 30-100 above the sea level, hilly terrain of S-SW and W exposure. The soil is a typical Istrian red soil, shallow and rocky. Selected positions give red varieties a distinctive Mediter- ranean red soil (terra rossa) warmth, with fruitiness, freshness and moderate strength, characteristic of Istrian red wines.
VARIETY: Teran, Borgonja, Merlot
VINIFICATION: Processed by grape cooling, separation of petioles with minimal damage to berries, short-term cold maceration or rapid processing without maceration, pressing berries with dry ice (CO2) and nitrogen processing systems inertisation, rapid must clarification via flotation, fermentation in stainless steel tanks at 14-16 °C, ripening on fine yeast precipitate (sur lie) for 4 months without malolactic boiling. Maturation in stainless steel containers, bottled after 4 months of ripening, aged in a bottle for a month after bottling.
RIPENING POTENTIAL: Enjoy immediately or store for up to 3 years
WINE DESCRIPTION: Dark ruby-red colour, blueberry, blackberry, floral aromas, extremely fruity, soft, fresh, pleasant durability and sweet tannins.
RECOMMENDATION: Enjoy at 16-18°C with warm appetizers with meats, cold meat cuts and cheeses, grilled meat, or fish.
