VINEYARD: Locations in the vicinity of Poreč; Devici, Mornarica, Kazaveca, Krsete, Bašarinka, planted from 2004-2006, positioned at the altitude 20-110 m, hilly terrains of S-SE, S and SW exposures, red soil (terra rossa), Guyot training form, yield of 1.0-1.2 kg/vine.
VARIETIES: Merlot, Syrah, Cabernet Sauvignon, Cabernet Franc
Castello is a blend of the best barrels of separate varieties in the best proportion for a certain year, not produced every year, approx. 20,000 bottles/year.
HARVEST: Mid-September to early October
VINIFICATION: Harvest of selected best vineyard blocks, processing of separate varieties, separate fermentation in stainless steel containers, after which only the best fermentations proceed to malolactic fermentation and the continuation of maturation of 12 months in French oak barrique barrels -,of various age. After re-selection of the best barrels, the varieties are paired and continued to ripen in stainless steel containers until bottling.
RIPENING: 12 months in barrique barrels, 6-12 months in stainless steel containers, bottled in 0.75 l bottles with a cork stopper, aged in a bottle for a min. 2-6 months, wine mostly goes on sale 3 years after harvest.
RIPENING POTENTIAL: Enjoy immediately or store in an appropriate condition, the wine will continue to develop over the next few years, the optimal time is 5-8 years from the harvest.
WINE DESCRIPTION: Deep ruby-red colour, of layered fruit-spice aromas, which develop in a glass, of black currants, blueberries, coffee, vanilla, and caramel. Merlot's pliable fine tannins and warmth, Syrah's special spicy aromatics, Cabernet Sauvignon's sturdy tannin structure, Cabernet Franco's fresh fruitiness and tannin elegance are perfectly combined in this cuvée. On the palate, Castello is an extremely elegant, soft, and supple wine, of medium body, layered and durable, of fruity and spicy taste, which are typical characteristics of the best red wines of fresh Mediterranean climate.
